Planning your wedding menu
Great weddings are remembered for many reasons, but exceptional food is always one of them. Long after the speeches have finished and the music has faded, guests will remember the meal they shared around your table.
At Amber Springs Hotel, we believe your wedding dining experience should feel generous, beautifully presented and unmistakably yours. Working with Executive Chef William Millar and our experienced Wedding Team, you will create a menu that reflects your tastes while ensuring every guest feels carefully looked after.
Creating Your Wedding Menu
Your wedding menu will be discussed in detail with your Wedding Coordinator during the planning process. Our menus are designed to offer plenty of choice and flexibility, allowing you to create a dining experience that feels personal to you.
You can:
- Mix and match courses from your selected menu
- Swap dishes to suit your preferences
- Discuss creating a bespoke menu
- Choose separate meals for younger guests
- Request vegan, vegetarian and other dietary alternatives
- Discuss cultural menu requirements where our kitchen facilities allow
Our team will guide you through the available choices and help you create a menu that suits your tastes, your guests and the style of your wedding.
Your Menu Tasting Experience
Your menu tasting will usually take place approximately three months before your wedding, although the timing can be adjusted where necessary.
The tasting is designed for the couple and normally lasts between one and two hours. You will sample dishes from the exact wedding menu you are considering.
Your tasting will usually include:
- Two starters
- One soup or sorbet
- Two main courses
- Two desserts
- Wine to accompany your meal
Whether the tasting is complimentary will depend on your chosen wedding package. Additional guests may attend for an extra charge, subject to prior arrangement.
The tasting gives you the opportunity to experience the dishes, discuss presentation and make any final adjustments before confirming your menu.
Dietary Requirements and Allergies
We understand how important it is that every guest feels included and properly catered for.
Vegan, dairy-free, halal, kosher and other dietary options may be provided on request. Coeliac requirements and food allergies can also be accommodated where possible.
All allergies, intolerances and coeliac requirements must be clearly recorded beside the relevant guest's name in Moposa and discussed with your Wedding Coordinator.
Please note: Our kitchen is not a nut-free or gluten-free environment. While our team will take every reasonable precaution when preparing meals, we cannot guarantee the complete absence of traces of nuts, gluten or other allergens.
Last-minute dietary requirements can usually be accommodated, but information should be provided as early as possible so our kitchen team can prepare appropriately.
Meals for Younger Guests
Children can enjoy a half portion of the adult wedding meal or choose from our children's menu.
Typical children's choices may include:
- Soup
- Chicken goujons
- Sausages
- Pasta
- Ice cream
Children's meal selections and any dietary requirements should be confirmed with your Wedding Coordinator during the final planning stage.
Meals for Wedding Suppliers
Suppliers working throughout your wedding day can be catered for.
Suppliers eating in the function room may receive the agreed wedding meal. Suppliers dining outside the function room may select food from the bar menu, subject to the arrangements confirmed with your Wedding Coordinator.
Supplier meals should be discussed in advance and should not be included within your confirmed wedding guest numbers.
Your Evening Food
Your evening food will be discussed during your planning meeting with your Wedding Coordinator.
Our team will guide you through the available buffet and late-night food choices, suitable serving times, dietary alternatives and any available upgrades.
Your evening offering can be selected to complement your wedding menu and provide something enjoyable for guests as the celebrations continue.
Your Wedding Cake
Your wedding cake will usually be served alongside the evening food.
Once the cake has been delivered and displayed, our kitchen team will cut and plate it for your guests. Wedding cake does not replace the dessert course within the wedding meal.
Any cake remaining after the celebration can be boxed and collected the following morning.

Everything is freshly prepared by Executive Chef William Millar and his team using quality ingredients, including beef, vegetables and potatoes sourced from our own farm in Craanford.
